Leek and Potato Soup with Smoked Bacon and Basil

Serves 4
Ingredients
- 2 oz butter,
- 14 oz leeks chopped,
- 8 oz onions chopped
- 8 oz Potatoes diced,
- 2 pints Chicken Stock,
- 150 mls cream,
- 12 basil leaves,
- 2 oz smoked bacon,
- 2 oz flour,
- salt/pepper
Method:
Melt butter in saucepan. Add leeks, bacon
and onions. Cook over a low heat but do not brown it.
Add potatoes and flour. Cook for two minutes. Add stock
and simmer until the potatoes are tender. Add the cream
and simmer for 5 minutes. Add basil leaves and hand blend.
Season to taste. Serve with cream, croutons and herbs.
