Cod Fillet with Smoked Salmon & Garlic Butter

Cod is a wonderful fish with great texture. The smoked salmon butter is so simple and tasty. Make sure to serve crusty bread to mop up all those juices.

Ingredients - Serves 4
4 x 200g/7oz thick cod fillets
100g or 4oz plain flour
2 tbsp vegetable oil

Vegetables

1 carrot peeled
1 croquette

Parsley Butter

150g/5oz butter
50g/2oz smoked salmon cubes
3 cloves garlic (crushed)
1 tbsp chopped parsley
Juice of 1 lemon
METHOD :

Parsley Butter

Melt butter in a saucepan with smoked salmon and crushed garlic.
Cooked gently for about 10 mins leave to infuse (allow flavours to mingle) for 20 mins.
Add chopped parsley, lemon juice and seasoning.

Cod Fillets

Season and dredge the fillets in flour. Shake off excess.
Heat the oil in a large pan.
Add a knob of butter and cook the cod fillets over a medium heat for about 4 mins on each side.
To serve :
Place the vegetables on the centre of the plate.
Place cod on top of the vegetables.
Spoon over the butter.
Serve fresh herbs.
Serve with crusty farmhouse bread.
