Pork and Mushroom Stroganoff

(Serves 4)
Ingredients
- 200g / 7oz tagliatelle
1 tsp plain flour
2 tsp paprika
450g / 1lb pork fillet, trimmed and sliced
1 tsp vegetable oil
25g / 1oz butter
1 onion sliced
1 garlic clove, crushed
225g / 8oz button mushrooms, halved
4 tsp white whine
1 tsp Dijon mustard
200 ml cream
2 tsp chopped flat leaf parsley
2 tsp tomato puree

- Method
- Cook the tagliatelle according to packet
instructions. Sprinkle the flour and paprika on a plate
together. Season and add pork. Toss to coat.
- Heat oil and half the butter in a large pan. Onces
sizzling add pork. Cook on a high hear stirring for
5 minutes until golden. Remove with a slotted spoon.
Set aside.
- Add remaining butter to pan. Add onion, garlic and
mushrooms. Cook stirring for 5 minutes. Return pork
to pan and stir well. Add wine, mustard and tomato puree.
Cook for 1 minute stirring. Add cream and cook until
sauce has boiled and thickened. Season to taste.
- Drain pasta. Divide between 4 warmed plates. Spoon
over stroganoff and garnish with parsley.
