Ingredients

2 duck breasts,

1 tsp coriander seed,

salt and pepper,

8 cloves of garlic (whole)

Method

Heat pan. Score duck skin with knife. Rub coriander seed into duck, Cook skin - side down for 2 minutes. Turn over and cook for a further 2 minutes. Finish skin side down and place in oven for 8 to 10 minutes. Leave to stand for 2 minutes.
