Stuffed Pork Fillet with Basil and Pine Nuts

Ingredients
- 1 Pork Fillet
Marinade
- 2 cloves garlic,
- 2 tbsp soy sauce,
- 2 tbsp curry powder,
- 2 tbsp chopped ginger,
- pinch cinnamon,
- 1 tbsp brown sugar,
- 2 tbsp sunflower oil.
Stuffing
- 7 oz sausage meat,
- 2 tbsp pine nuts,
- 1 tbsp chopped parsley,
- 1 tbsp chopped basil,
- salt and pepper.
Stock
- ½ pint of beef stock
Method
Preparing the Pork: slice pork
in half. Spoon stuffing into Pork and roll like a swiss
roll. Tie with string.
Cooking the Pork: Cook in pan with
butter for 2 minutes. Place in oven to cook for a further
30 minutes turning occasionally. Remove from oven and
leave to rest for 2 minutes. Place marinade in saucepan.
Add ½ pint of stock (beef). Bring to boil and allow to
reduce. Season to taste.
Presentation: Serve Sliced Pork
with Boiled Rice.
