Carrot and Coriander Puree

Ingredients:
5lb carrots
3oz butter
1 teaspoon brown sugar
1 tablespoon chopped coriander
Method:
- Wash, peel and rewash the carrots and cut into slices. Cover with water. Add large pinch of salt. Simmer and cook until tender. Drain well and place in food processor. Add butter, sugar and chopped coriander. Season some more and blend to a puree. This will take 2 minutes. Remove from blender and place in serving dish. Garnish with more coriander.
