Balsamic And Honey Glazed Chicken Bake

Serves 4
Ingredients
4 chicken fillets (skin on)
Marinade
5 tablespoon clear honey
1 tablespoon wholegrain mustard
1 clove of garlic, crushed
1 teaspoon grated root ginger
2 tablespoon balsamic vinegar
2 tablespoons Worcestershire sauce
2 tablespoons tomato ketchup
1 tablespoon lemon juice
METHOD:
- Mix all the marinade ingredients together. Place the chicken in a non metallic dish. Pour the marinade over the chicken, cover and leave to marinade for 6 hours or overnight in the fridge.
- Preheat the oven to 220ºC/Gas 7. Sear the chicken skin side down with a little oil in a frying pan on high heat. Cook for 1 minute on both sides, then place chicken on top of root vegetables. Brush the chicken with the marinade. Cook for 12-15 minutes until chicken is cooked and nicely glazed. Finish with chopped parsley and serve with some green salad.
