Feta Cheese, Red Onion And Avacado Salad

Ingredients
4 red onions, sliced
2 ripe avocados, peeled
8oz feta cheese
2 heads of cos salad
2 tablespoons black olives
1 tablespoon lemon juice
METHOD:
- Peel avocados and cut in half. Remove stone and cut into large cubes. Spoon lemon juice over to prevent discolouring.
- Wash salad and pat dry. Place in bowl. Sprinkle the onions, avocado and olives over. Finally crumble the feta cheese over and drizzle with dressing.
Classic French Dressing:
8 tablespoons olive oil
3 tablespoons red wine vinegar
1 clove of garlic, crushed
½ teaspoon Dijon mustard
pinch of sugar
- Place all the ingredients in a screw top bottle. Season with salt and pepper. Shake well and store in the fridge for up to 2 weeks. Shake well before serving.
